Coffee Mini Muffins

Little bite. Big flavor.



Ingredients

1 Cup all purpose flour

1 tsp baking powder

Pinch of salt

1 tsp cinnamon

Tiny dash cardamom

Instant coffee granules

1 egg

1/2 Cup liquid sweetener

1/2 Cup liquid fat


Instructions

Preheat oven to 350 and line your muffin tins. (Batter will make 24 mini muffins)

Whisk together your flour, baking powder, salt, cinnamon, cardamom, and instant coffee granules.

Whisk in your egg, sweetener, and fat until combined.

Pour batter into muffin tins, about 1 Tbsp per muffin.

Bake at 350 for 15 minutes.


Notes

For sweetener use any liquid sweetener or combination of sweeteners like maple syrup, honey, agave nectar, molasses, etc. Beware that your choice of sweetener may impact the flavor and texture of your muffins.

For fat use any liquid fat like melted butter, vegetable oil, olive oil, etc. Beware that your choice of fat may impact the flavor of your muffins.

I didn't measure my instant coffee, just dumped. I probably used about 2 Tbsp but honestly have no idea.

For the bake time I set my timer for 10 minutes and then forgot to set it again after that so I don't actually know how long they baked. Bake them until they are fully baked and a toothpick comes out clean.

These muffins are super soft and moist with tons of flavor!
