No-Bake Apple Oatmeal Cookies

A taste of Fall amidst the Summer heat


Ingredients

1 stick butter

1 cup sugar

1 cup apple, grated (about 4 apples)

1/2 tsp cinnamon

1/2 tsp nutmeg

1/2 tsp vanilla

1 1/2 cups rolled oats


Instructions

  1. Melt butter in a saucepan over medium heat.

  2. Stir in the sugar, apple, cinnamon, nutmeg, and vanilla.

  3. Allow mixture to simmer for 1 minute.

  4. Stir in the oats.

  5. Scoop the mixture into heaping tablespoons and flatten into rounds on a parchment lined pan.

  6. Allow to chill until set.


Notes

The above recipe is a double batch.


I used a mixture of brown and white sugar in my cookies. Didn't really measure the parts, just put some brown sugar in the measuring cup and then topped it off with white sugar.


I only peeled half my apples and left the other two unpeeled. I think the skin adds a nice little fleck of color in the cookies. When you grate your apples you are going to want to squeeze out some of the juice. Highly recommend saving the juice for a tasty drink as a reward for you efforts.


Depending on the butter you use, you may want to add some salt in with the other "seasonings." You could also sprinkle the tops of the cookies with a little sea salt if you wanted. If you use a salted butter, you will likely not want to add too much salt.


I topped my cookies with a simple glaze. I didn't measure anything, just throw some powdered sugar, vanilla, and cinnamon into a bowl with some milk until you reach your desired consistency.


I didn't have nutmeg (and even if I did I don't think I would add 1/2 tsp) so I just did a heaping 1/2 tsp of cinnamon.


Feel free to add nuts or other spices like ginger to make these cookies your own.
