Sweet and salty without the oven
Ingredients
1 bag pretzels (16oz)
1 1/2 cups unsalted butter, melted
1 1/2 cups smooth peanut butter
3 cups powdered sugar
Splash of vanilla
2 cups semisweet chocolate chips
1 tbsp shortening
Instructions
Prepare your pan by lining a 9x13 dish with foil or parchment paper.
Set aside 1 1/2 cups of pretzels to be used for topping. Turn the remaining pretzels into find crumbs using a food processor (or for a bit more texture, crush them hand by letting out a lot of pent up aggression).
In a large bowl, mix together the melted butter, peanut butter, powdered sugar, vanilla, and pretzel crumbs.
Press the pretzel mixture into your pan.
Melt together the chocolate chips and shortening in the microwave or on the stove, stirring until smooth.
Spread chocolate over the pretzel base. Sprinkle the reserved pretzels over the bars while the chocolate is still soft.
Refrigerate until the chocolate is set. Remove from pan and cut into bars.
Notes
These bars are really yummy but mine turned out really crumbly. I think my downfall may have been the fact that I melted the peanut butter with the butter. Leaving the peanut butter unmelted may help with binding everything together. If you do end up with crumbly bars, the left over crumbs and broken pieces make for great ice cream toppings!
I browned my butter a little bit to add to the nutty flavor. I also added some dark chocolate and coffee powder to the chocolate top for a bit of variety. Instead of shortening, I used coconut oil and it seemed to work well.
