Everything you want in a special cookie
Ingredients
2 3/4 Cups All purpose flour
1 tsp Baking soda
1 tsp Salt
1 Cup Unsalted butter (softened)
1 Cup Brown sugar
1/2 Cup White sugar
2 Eggs (room temperature)
2 tsp Vanilla extract
1 1/2 Cups White chocolate chips
1 1/2 Cups Chopped macadamia nuts
1 1/2 Cups Craisins
Instructions
Whisk together the flour, baking soda, and salt in a large bowl.
Cream together the butter, brown sugar, and white sugar using a stand mixer with paddle attachment or an electric hand mixer. Add in the eggs and vanilla one at a time and mix until fluffy.
Slowly mix in the dry ingredients until just combined. Fold in the white chocolate chips, macadamia nuts, and craisins.
Cover the dough and allow to chill in the fridge for at least 2 hours.
Preheat the oven to 350 degrees. Using a large cookie scoop, drop the chilled dough onto your preferred baking sheet. Leave room for some spreading during baking.
Baking for 9-12 minutes or until the edges are barely golden brown and the tops are set. Allow to cool before moving to a wire rack to cool completely.
Notes
I formed the cookie dough into 2.5 oz balls before chilling. I weighed mine for consistency in size. I think I ended up baking mine for about 14 minutes due to the large size. Just watch them when you are getting close to the 12 minute mark and adjust accordingly.
