Better Than Boxed Buttermilk Brownies

Ingredients

1/2 Cup unsalted butter

1/4 Cup unsweetened cocoa powder

1/2 Cup vegetable oil

2 Cups white sugar

2 eggs

1/4 Cup Buttermilk

1/2 tsp vanilla extract

2 Cups all purpose flour

1 tsp baking soda

1/2 tsp kosher salt

1 Cup semi-sweet chocolate chips (optional)

Powdered sugar (for dusting)


Instructions

Preheat oven to 400 degrees and live a 9x13 pan with parchment paper or grease with cooking spray.

Combine butter, cocoa powder, and oil in a small pan over medium heat. Bring to a boil and then remove from heat.

Combine white sugar, eggs, buttermilk, and vanilla in a large bowl. Slowly whisk in the melted butter mixture. Mix in the flour, baking soda, and salt until just combined. Fold in the chocolate chips if using.

Pour brownie batter into the prepared baking dish and bake for 20 minutes. Allow to cool before cutting.


Notes

The original recipe for these brownies has a chocolate frosting to go on top, I prefer to dust with powdered sugar.

Recipe is easy to cut in half to fit an 8x8 pan, or for thicker brownies try making a batch and a half in a 9x13.
